Spanish artisan ham piece, developed and cured for 13 months in Teruel, Spain. Spanish serrano ham piece cured in natural drying places with a temperature between 15º and 25ºC. The humidity is other decisive factor in the spanish serrano ham curation process and must be maintained between 40% and 60%. All the parameters must be controlled to get a serrano ham with the desired characteristics. |
