Spanish iberian ham without leg. This ham is cured during 13 to 15 months. Elaborated in Bajo Aragon following the traditional recipe. The spanish serrano ham curation process takes place in natural drying places in whose temperature and
humidity are perfectly controlled during all process. Curation is a slow process, about 13 months long. The serrano ham must sweat and remove the humidity rest. When the serrano ham sweats the fat filtration between the muscle fibers guaranteing the delicious flavor. |
